½ lb. left over roast beef, cut into strips
1 tbsp. sugar
2 tbsp. soya sauce
3 tbsp. oil
4 cups fresh vegetables of choice, cut into chunks or strips
¼ tsp. salt
¼ cup water
2 tbsp. cornstarch
Combine sugar and soya sauce. Pour over beef strips to marinade for 30 minutes. Boil vegetables for only 1 or 2 minutes so they are still nice and crunchy. Drain water from vegetables and cool. Heat oil and salt in frying pan on high and add meat. Fry meat for 2 or 3 minutes until browned. Add vegetables and stir fry for a few minutes. Combine cornstarch and water and add this to pan. Stir fry until thickened. Serve with rice or angel hair pasta.
